Pascucci Al Porticciolo

Pascucci al Porticciolo is known for its cuisine that highlights the importance of the territory. With the motto “Cook the Sea” their focus is on seafood, starting from the inland areas and reaching all the way to the beach.

Our Franciacorta wines have been chosen by Pascucci al Porticciolo restaurant in Fiumicino (RM) to harmonize perfectly with their delicacies.
How important is the territory in your cuisine?

The territory is a key ingredient in our cuisine. From foraging wild herbs in the Oasi di Macchiagrande to cultivating vegetables in the gardens of Isola Sacra, and maintaining a continuous dialogue with local fishermen. These are just some of the elements that contribute to the identity of Fiumicino's territory and find their place in our seafood cuisine, giving it strength and character and making it unique in the Italian culinary landscape.
How would you define the connection between food and wine?

For me, the connection between food and wine is about "harmony". It is an important union of contrasting flavors, aromas, and colors. I believe in chromatic pairings, where not only the food and wine harmonize but also the table itself.

What is the first thing that comes to mind when thinking about Franciacorta Castello Bonomi?
