What influence does the territory have on your restaurant?
Territory is of great importance, which we try to convey to customers. As Italians, we care about the right food and wine pairing. The search for products that are always fresh, some of which we produce directly such as pasta and desserts, or products that we import directly from Italy after careful research.
How would you define the connection between food and wine?
Unbreakable, in the best Mediterranean tradition! Although I was born in Zurich, the Italian traditions of food and wine are firmly in my heart and mind. I carry on our Italian excellence and offer them to my clients with pride.
What is the first thing that comes to mind when you think of Franciacorta Castello Bonomi?
Undoubtedly the visit I made 15 years ago! I was absolutely fascinated by the winery, the place and the meticulousness of the work in the vineyard and in the cellar to achieve the highest quality. Immediately I decided to import Castello Bonomi Franciacorta wines to Switzerland, I was a pioneer. It is great to be your Ambassador in Zurich.
