Originally from Rome, with a background as a musician and a strong foundation in food and wine, he has built an international career in the restaurant industry. Today, he brings a passionate vision centered on excellence, culinary culture, and meaningful relationships.
The connection is essential. Without wine, food would lack an intelligent and articulate counterpart—one that can respond and engage on the same level. Of course, a meal can exist without wine, but the dialogue between food and water is far more monotonous and uninspiring.
Is offering Italian sparkling wines an added value for your restaurant? How are they perceived by your guests?
Italian sparkling wines are a source of pride for us, for a couple of reasons. First, we are in the United States, and as a restaurant with strong Italian roots, serving sparkling wines from other countries would not truly represent who we are. Secondly, Italy’s DOC sparkling wines express outstanding quality and deserve to be promoted on a global stage.

Why choose our Franciacorta?
My restaurants have always had a strong focus on Italian sparkling wines, but I felt the need to find a Franciacorta that could truly express both quality and character: a sparkling wine that is complex yet never challenging, fragrant, fresh, deeply rooted in its territory, and in perfect harmony with our menu. During this search, I relied on the advice of my importer, Franco Wine Import, who introduced me to several samples. Among them, Castello Bonomi Franciacorta Cuvée 22 immediately stood out—it was exactly what I had been looking for. We added it to our wine list, and the response was immediate. Today, other venues in the area have also chosen to feature it, confirming the strength and authenticity of this choice.
