Our Franciacorta have been chosen by Bistrot 64, in Rome to complement their innovative and gourmet cuisine.
Emanuele, Bistrot 64 manager, opened the restaurant in 2012 in Rome. The restaurant presents a gourmet and disruptive cuisine but in a low-cost key. In 2017 they gained their first Michelin star.
How important is the territory for your cuisine?

The territory is the most important thing for us. We try to focus on finding organic ingredients and also use products from our own garden. We do a lot of research on regional products and we also focus on Made in Italy products.

How would you define the connection between food and wine?

The connection between food and wine is an ideal fusion. You can drink wine alone but food without the pairing of a good bottle is not enough.
What is the first thing that comes to mind when thinking about Castello Bonomi’s Franciacorta?

CruPerdu. CruPerdu was the first wine that I tasted and it made me think: “Wow!”. I also like Franciacorta Castello Bonomi because they have a story behind them, a story that you can tell, and for me, wine must be told.
