Who is answering this interview?
Filippo Cortivo, sommelier and owner of Osteria Mamma. The restaurant was founded by Mamma Loredana, who, after years of hard work, opened the osteria in March 2010. Although Mamma Loredana is no longer with us, her traditions and memories continue to live on through the dishes served at the restaurant.
How important is the connection with Italy, and how is it reflected in the experience you offer your customers?
Italy is our home, our roots.
The idea behind Osteria Mamma has always been to offer a 100% Italian menu: handmade pasta and authentic dishes, without compromise.
In the beginning, it wasn’t easy, especially sourcing ingredients directly from Italy (expensive and hard to find), but today bringing Italy to the table is easier, though never taken for granted.
In the kitchen, there has always been the heart of Mamma Loredana, to whom the restaurant’s name is dedicated and her legacy continues to live on in every dish we serve.
How would you describe the connection between food and wine?
It may be surprising, but before Osteria Mamma, I didn’t know much about wine.
It was through the restaurant that I discovered the importance of food pairing: the wine tells the story of a dish and the dish completes the wine.
They enhance each other, creating an experience that neither could offer on its own.
