In the Vineyard

In the Cellar
After a gentle pressing to extract only the flower must, vinification occurs using cold techniques to enhance the aromas and finesse of the wine, with fermentation at temperatures of approximately 14°C. The base wine, following the first fermentation in stainless steel, undergoes controlled temperature maturation for about 6 months. After refermentation in the bottle, the Franciacorta Rosé Millesimato DOCG Castello Bonomi matures for a minimum of 36 months in the bottle before disgorgement. It then continues to refine in the bottle.
